INGREDIENTS

  • 55g or 1/4 Cup Butter

  • 1/2 Cup Jaggery

  • 2 Tbsp Sugar 

  • 1 tsp Vanilla Extract Epicurious Hedgehog

  • 2 Eggs

  • 4 Overripe Bananas

  • 1/3 Cup Natural Yoghurt Bio

  • 1 ½ Cups All Purpose Flour

  • 1 Tsp Bicarbonate Soda Zesta 

  • 1 Tsp Baking Powder 

  • 1 Tbsp Cinnamon 

  • ¼ Tsp Sea Salt 

  • 100g Dark Espresso Chocolate Absolute Chocolate Espresso Chocolate 54% – 100g 

  • 100g Milk Chocolate 50% Dark Sugar Free

  • 2 Semi Ripe Bananas 

Directions

  • Preheat oven to 180ËšC. Line an 8½ x 4½ inch loaf tin with parchment paper, leaving enough overhang (about 5cm on each side.
  • Mix the flour, cinnamon, salt, bicarbonate & baking powder in a medium-sized bowl and set aside.
  • In a stand mixer on med-high speed cream together butter, sugar & jaggery for 4 mins until light and fluffy. Scraping down the sides of the bowl as needed. Add in eggs one at a time, mixing in between. Next, add vanilla essence, yogurt & mashed ripe banana and mix.
  • Add in the flour mixture & mix on low until just combined. Fold in chocolate chunks then pour batter into prepared loaf tin. Bake for 40-45 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
