500g boneless skinless chicken
thighs.2 red onions thinly sliced.
2 tomatoes thinly sliced.
1 red serenade chili, sliced.
1⁄2 tsp cumin powder
1⁄2 Tsp coriander powder
1⁄4 tsp chili powder
1 tsp dried oregano
1 tbsp ginger garlic paste
1 iceberg lettuce thinly sliced
3 pita flatbreads or 6 tortilla
wraps450ml natural yogurt, halved.
- Yoghurt Herb Sauce
1 lemon juice.
Half of natural yogurt. (225ml)
1 tsp ginger garlic paste.
1⁄2 bunch parsley chopped.
1⁄2 bunch mint chopped.
1 tsp honey. (optional)
Salt and pepper to taste.
Directions
- Marinate chicken pieces with ground spices, yogurt, and 1 tsp ginger & garlic paste, salt, and pepper for 30 mins.
- Thinly slice onion, tomato, and lettuce then set aside.
- To a hot pan on medium heat sear the chicken pieces for 3 mins until golden brown and releases easily when flipped. Set aside once fully cooked.
- Make the garlic herb sauce by combining chopped herbs, ginger garlic paste, salt, pepper, and lemon juice.
- Slice the chicken lengthwise, Warm the pitta bread, and build the gyro with a layer of herb sauce, lettuce, tomato, onion, and sliced chicken pieces. Top with more sauce and enjoy. (Cut a large piece of chicken to the center to check there is no trace of pink.)
