345g plain flourÂ
45g corn starch
1 ½ tsp baking powderÂ
½ tsp saltÂ
150g caster sugarÂ
120g salted butterÂ
150ml milkÂ
2tsp ground flax seedsÂ
2tsp vanillaÂ
40g of cranberriesÂ
Directions
- Preheat your oven at 190°C. Â
- Melt butter over low heat.
- Remove from heat and add all the wet ingredients and flax seeds. Leave to cool for 15 minutes.Â
- In the meantime add mix all of the dry ingredients in a bowl and add in the wet ingredients.
- Â Mix with a fork to avoid over kneading.
- It should be slightly sticky then add the cranberries and mix.
- Take half of the mixture out and shape into a log roughly 20 cm by 10cm by 3 cm it should be a smooth top.
- Repeat for the other half.
- Â Bake for 25 min till golden brown then remove to cool.
-  After 15 minutes cut the slab into 2 cm thick pieces at an angle. Reduce the temperature to 160 °CÂ
- Transfer these pieces to the baking tray and bake for 30 minutes flipping halfway.
- Transfer to a wire rack to cool completely.
