Scary Froglets for Hallowe’en
Course: Recipes, KidsRecently we found a way to sneak in some extra greens, and that was with the Frog Muffins – which also happen to be perfect for an onslaught of small people playing trick or treat! I made double the batch which worked really well – and we like ham in this house but you could also substitute the ham for a strip of red pepper if you’d prefer that!
INGREDIENTS
100g raw spinach
150g plain flour
1 tsp baking powder
2 eggs
75g grated cheese
30g butter, melted and cooled
100ml milk
pinch salt
8 teaspoons cream cheese
8 black olives, halved
Ham
Directions
- Preheat the oven to 180 deg C, and put eight paper muffin cases in a tray.
- Blend the spinach in your Magimix until smooth.
- Sift the flour and baking powder into a large mixing bowl. Add the cheese and salt and stir together.
- Break the eggs and miix with the milk, spinach and butter. Whisk up.
- Make a well in the dry ingredients and slowly add the milk mixture and mix everything up really well.
- Divide the mixture evenly between the eight cases and cook for 15 – 18 minutes.
- Cut the ham into tongues whilst the muffins are baking.
- When the muffins are completely cool, put two little blobs of cream cheese on as eye balls, add the halved olives as eyes, and then cut a slit for the mouth and add the ham tongue.
